The quest for the perfect ceviche recipe has begun! Some people research rock formations, some people study crow influenza, we do ceviche recipes. In case you are not familiar with it, ceviche (pronounced seh-VEESH or seh-VEECHAY) is a traditional Peruvian dish of raw fish or seafood "cooked" in citrus juice. There are many variations and we, here at The Panama Report consider ourselves to be borderline ceviche connoisseurs. We just love good ceviche recipes and are in hot pursuit of the best that we can find. The hunt has begun in Panama though we may cross borders if we deem it necessary. The person, restaurant, or magical force can create the best ceviche will be featured on our site.

Matt I have been working on that ceviche recipe for a while here in the Republic of Panama. I spent 3 years in Costa Rica and found a resturant-fish market in Belin a small town 15 minutes outside of San Jose where they make the best ceviche I haev ever tasted. I am a sushi expert and have been eating it for over 40 years. Here in latin American no one knows what good sushi is. So I was forced to turn to ceviche. When I moved to the Republic of Panama I thought I would be stepping up a notch in the ceviche world (WRONG)There are a few resturants who almost make it right and then there is the garlic and onion YEEK that you find everywhere. I have made it a few times, once it almost tasted right, I will send you the recipe if I hit .
