One of my favorite food writers Anthony Bourdain has an interesting philosophy about good food and I am a firm believer. He says that the best meal is not necessarily the best food or even the best service, but more a combination of many different factors: although he's a world-renowned food critic, his favorite meal is a simple hamburger on a secluded Caribbean beach. Similar to Bourdain, I believe the best ceviche I have had in Panama to be from a street vendor during Carnaval. It was pretty hot out and I was cooling off with a bottle of icy water. An old dude passed carrying a tray of ceviche on his head. I motioned him over and bought one of the little cups for $.25. It came in a little plastic cup--the kind you get at the dentist--with a small little ice cream sample-like spoon. The ceviche itself was good but it was the atmosphere that made it great. I was eating an age old recipe while celebrating an age old tradition. Perfect weather. A sunny Saturday afternoon. Not a care in the world. As Bourdain says as he enjoys a simple burger in paradise--- “man, f*ck truffles” |
